Instructions
- Work at a steady pace to ensure whipped egg whites and cream remain cool.
- Separate the eggs while they are cold, placing egg whites in one bowl and yolks in another. Set the whites aside while preparing other ingredients.
- Whisk the egg yolks until uniform in texture.
- Melt the dark chocolate and butter together in a microwave-proof bowl. Microwave in 30-second bursts, stirring until smooth and set aside to cool slightly.
- Beat the cream until stiff peaks form, avoiding over-whipping.
- Add sugar to the egg whites and beat until firm peaks develop.
