Ingredients

  • 125g / 4.5 oz dark cooking chocolate, bittersweet / 70% cocoa
  • 10g / 0.3 oz unsalted butter
  • 1/2 cup cream, full fat
  • 3 tbsp caster sugar (superfine white sugar)

Instructions

  • Work at a steady pace to ensure whipped egg whites and cream remain cool.
  • Separate the eggs while they are cold, placing egg whites in one bowl and yolks in another. Set the whites aside while preparing other ingredients.
  • Whisk the egg yolks until uniform in texture.
  • Melt the dark chocolate and butter together in a microwave-proof bowl. Microwave in 30-second bursts, stirring until smooth and set aside to cool slightly.
  • Beat the cream until stiff peaks form, avoiding over-whipping.
  • Add sugar to the egg whites and beat until firm peaks develop.
