- 1 ½ pounds beets
- 4 teaspoons olive oil, divided
- 2 tablespoons honey, divided
- ¾ teaspoon salt, divided
- ¼ teaspoon black pepper
- 1 (8-ounce) log goat cheese, broken into chunks
- 2 tablespoons plain Greek yogurt
- 1 teaspoon fresh thyme, finely chopped, plus more for serving
- 1 teaspoon fresh rosemary, finely chopped, plus more for serving
- 1 teaspoon lemon juice from 1 lemon
- 2 mandarin oranges, peeled and segmented
- 2 tablespoons roasted pumpkin seeds, finely chopped
Instructions
- Preheat the oven to 400°F. Rinse, trim, and coat the beets in olive oil and salt before wrapping them in foil packets.
- Roast the beets for 40 to 50 minutes until tender. Allow to cool slightly before peeling and slicing into wedges.
- In a food processor, blend goat cheese, Greek yogurt, honey, thyme, rosemary, and lemon juice until smooth.
- Spread whipped goat cheese on a platter, top with beet wedges and orange segments, garnish with pumpkin seeds and extra thyme.
Notes
