Description

This visually striking dish is a delightful combination of roasted beets, sweet oranges, and creamy whipped goat cheese. Perfect for holiday gatherings or casual meals, it brings warmth and vibrant color to your table.


Ingredients

  • 1 ½ pounds beets
  • 4 teaspoons olive oil, divided
  • 2 tablespoons honey, divided
  • ¾ teaspoon salt, divided
  • ¼ teaspoon black pepper
  • 1 (8-ounce) log goat cheese, broken into chunks
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon fresh thyme, finely chopped, plus more for serving
  • 1 teaspoon fresh rosemary, finely chopped, plus more for serving
  • 1 teaspoon lemon juice from 1 lemon
  • 2 mandarin oranges, peeled and segmented
  • 2 tablespoons roasted pumpkin seeds, finely chopped

Instructions

  • Preheat the oven to 400°F. Rinse, trim, and coat the beets in olive oil and salt before wrapping them in foil packets.
  • Roast the beets for 40 to 50 minutes until tender. Allow to cool slightly before peeling and slicing into wedges.
  • In a food processor, blend goat cheese, Greek yogurt, honey, thyme, rosemary, and lemon juice until smooth.
  • Spread whipped goat cheese on a platter, top with beet wedges and orange segments, garnish with pumpkin seeds and extra thyme.

Notes

Use smaller beets for sweeter flavor.
Make the dish a day ahead and assemble before serving.
