- 3–4 tablespoons butter
- 1/2 cup milk
- 2 tablespoons sour cream (or cream cheese, optional)
- 1 teaspoon garlic powder (or 1–2 cloves minced garlic)
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 tablespoons green onions
- 1/2 teaspoon fresh thyme or rosemary, finely chopped (optional)
Instructions
- Peel and cut sweet potatoes into 1-inch cubes.
- Place cubed potatoes in a pot, cover with salted water, and boil. Simmer until fork-tender (10-15 min). Drain well.
- Mash sweet potatoes until smooth using a masher or hand mixer.
- Add butter and warmed milk, mix until creamy. Adjust milk for desired texture.
- Stir in garlic powder, salt, pepper, green onions, and optional herbs. Mix well.
- Serve in a bowl and garnish with a pat of butter and extra green onions.
