Instructions
- Preheat the oven to 400°F and grease a casserole dish with butter.
- Melt butter and sauté diced onion until translucent, then add minced garlic.
- Whisk in flour and cook, then gradually add half-and-half, salt, and pepper until bubbly.
- Stir in 1 cup cheddar cheese and diced ham until combined.
- Layer one-third of the potatoes in the dish, spoon one-third of the sauce, and repeat twice more, finishing with sauce and remaining cheese on top.
- Cover with foil and bake for 30 minutes, then uncover and bake for another 20-30 minutes until golden and fork-tender.
- Sprinkle with fresh parsley before serving.
