Description

These Shamrock Sugar Cookies are a delightful treat, featuring a buttery flavor and festive decorations. Easy to prepare, they’re perfect for any celebration!


Ingredients

  • 2 and 1/4 cups (281g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (12 tbsp; 170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • seeds scraped from 1 whole vanilla bean
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup (12 tbsp; 170g) unsalted butter, softened to room temperature
  • seeds scraped from 1/2 of a vanilla bean
  • 3 cups (360g) confectioners’ sugar, sifted
  • 3 tablespoons (45ml) heavy cream, half-and-half, or whole milk, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • salt, to taste
  • optional: gel food coloring for tinting
  • optional: sprinkles for decorating

Instructions

  • Whisk flour, baking powder, and salt in a medium bowl and set aside.
  • In a large bowl, beat the butter and sugar together until creamy, about 3 minutes. Add the vanilla bean seeds and mix again. Add the egg and vanilla extract, beat until combined.
  • Mix the dry ingredients into the wet mixture and beat on low speed until combined. If too soft, add 1 tablespoon of flour.
  • Divide the dough into two portions and roll each to 1/4-inch thickness between parchment paper. Lightly dust with flour if needed.
  • Stack the rolled doughs, cover, and refrigerate for 1-2 hours or up to 2 days.
  • Preheat oven to 350°F (177°C) and line baking sheets with parchment paper. Cut shapes out of the chilled dough and place on the sheets.
  • Bake cookies for 11-12 minutes until lightly browned. Let cool on the sheet for 5 minutes before transferring to a wire rack.
  • Prepare frosting by beating butter and vanilla seeds, then adding confectioners’ sugar and heavy cream. Mix until creamy, adjusting sweetness with salt if necessary.
  • Color the frosting if desired and decorate the cookies as you like. Use sprinkles if preferred.

Notes

Ensure the butter is softened to room temperature for easy mixing.
Chill the dough to prevent spreading while baking.
Store unfrosted cookies at room temperature for up to 5 days.
