- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper
- Grated parmesan (optional)
Instructions
- Preheat oven to 425°F and prepare a rimmed baking sheet with parchment paper.
- Toss gnocchi, onion, bell peppers, and zucchini on the sheet pan, distributing evenly.
- Add sliced smoked sausages over the mixture.
- Drizzle olive oil, and season with Italian seasoning, salt, and black pepper; toss well.
- Roast in the oven for 25 minutes, stirring halfway through for even browning.
- Remove from the oven, sprinkle with grated parmesan if desired, and serve warm.
