  • 1 pound kielbasa or smoked sausage, sliced into 1-inch coins
  • 1 pound red potatoes, cut into 1-inch chunks
  • 1 red bell pepper, sliced into strips
  • 1/2 head small green cabbage, chopped into bite-size pieces
  • 23 tablespoons olive oil
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasonings

Instructions

  • Preheat the oven to 425°F.
  • Line a large rimmed baking sheet with heavy-duty foil. Spread the sausage coins, potatoes, bell peppers, and chopped cabbage evenly over the foil.
  • Drizzle olive oil over the sausage and vegetables. Season with salt, pepper, garlic powder, and Italian seasonings. Gently toss to combine, ensuring everything is evenly coated.
