Description

This Shrimp Scampi Orzo combines the flavors of garlic and shrimp in a comforting dish that’s ideal for quick weeknight meals or family gatherings.


Ingredients

  • Butter (3 tablespoons)
  • Shrimp (1 pound, uncooked, size 31-40)
  • Orzo Pasta (1 cup, uncooked)
  • Garlic (4-5 cloves, minced)
  • Crushed Red Pepper Flakes (1/4 – 1/2 teaspoon)
  • Dry White Wine (1/2 cup)
  • Chicken Broth (2 cups)
  • Lemon Juice (1 tablespoon)
  • Fresh Parsley (1 tablespoon, chopped)
  • Salt and Pepper (to taste)
  • Parmesan Cheese (freshly grated, optional)

Instructions

  • Melt butter in a pot over medium-high heat, add shrimp and cook until pink.
  • Sauté orzo, garlic, and red pepper flakes for about 2 minutes.
  • Pour in wine and let bubble, then add chicken broth and gently boil.
  • Simmer uncovered for 12 minutes, stirring frequently until orzo absorbs liquid.
  • Return shrimp to pot with lemon juice and parsley, let sit off heat for 3 minutes.
