- 2 pounds beef stew meat
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pounds baby potatoes
- 4 tablespoons unsalted butter
- 3 tablespoons olive oil
- 5 cloves garlic
- 2 tablespoons fresh parsley
Instructions
- Combine beef with Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika in a bowl.
- Layer halved baby potatoes at the bottom of a slow cooker; drizzle with half of the melted butter and olive oil, then sprinkle with minced garlic.
- Place seasoned beef cubes on top of the potatoes, drizzle with remaining melted butter and olive oil.
- Cover and cook on low for 6-7 hours, or high for 3-4 hours until beef is tender and potatoes are cooked.
- Stir to combine before serving, and garnish with chopped fresh parsley.
Notes
Sear the beef on high before adding to the slow cooker for enhanced flavor.
Fresh garlic is recommended for the best taste; dried garlic won’t deliver the same punch.
You can prep the dish a day ahead and refrigerate overnight before cooking.
