- 2 cups all-purpose flour
- 2 tablespoons avocado oil or vegetable oil
- 2 tablespoons unsalted butter
- 1/2 large white onion (sliced)
- 7 garlic cloves (finely chopped)
- 2 1/2 cups chicken stock
- 1/2 cup heavy cream
- Dried parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry, season with spices, and let sit at room temperature.
- Whisk together flour and seasonings in a bowl.
- Coat chicken thighs in seasoned flour and set aside.
- Heat oil in an oven-safe pan, sear chicken until golden brown.
- Remove chicken, sauté onions and garlic, then add flour to make roux.
- Whisk in chicken stock, simmering until thickened.
- Stir in heavy cream for a rich texture.
- Return chicken to the pan, bring to a boil, cover, and bake for 45 minutes.
- Serve over mashed potatoes or rice, garnished with parsley.
