Description

This Spaghetti Bolognese offers a rich meat sauce that’s perfect for busy evenings. With a blend of beef, tomatoes, and herbs, it promises satisfying flavors and easy preparation for a delicious family dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely chopped yellow onion
  • 2 tablespoons minced garlic
  • 1 lb ground beef 85 or 90%
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon cracked pepper
  • ⅛ teaspoon crushed red pepper
  • 2 tablespoons tomato paste
  • 1 tablespoon granulated sugar
  • ⅓ cup dry red wine
  • ¼ cup water
  • 28 oz canned whole peeled tomatoes
  • 2 teaspoons dried basil or 10 torn basil leaves
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • 1 dried bay leaf
  • 812 oz pasta for serving

Instructions

  • Heat oil in a large pan over medium heat.
  • Once shimmering, add onion and cook until softened (about 3 minutes).
  • Add garlic and cook until fragrant (about 30 seconds).
  • Add ground beef, salt, black pepper, and crushed pepper. Cook until meat is browned, draining excess grease if necessary.
  • Add tomato paste and sugar to the pan, cooking while stirring until browned/caramelized (1-2 minutes).
  • Pour in red wine, scraping the bottom to loosen browned bits. Cook until wine reduces by half (3-5 minutes).
  • Add water and tomatoes, breaking/crushing them with a spoon as you cook.
  • Add basil, parsley, oregano, and bay leaf, stirring until combined. Simmer for at least 30 minutes with an offset lid, stirring occasionally.
  • While sauce simmers, cook pasta according to package instructions. Combine with meat sauce when ready, using reserved pasta water if needed. Simmer until sauce clings to noodles, then serve topped with parmesan if desired.

Notes

For a spicier kick, increase the crushed red pepper.
Substituting red wine with broth works well for a non-alcoholic version.
Feel free to mix different pasta types based on your preference.
