- 2 large eggs, divided
- ½ teaspoon salt (or to taste)

- 1 (10×15-inch) sheet puff pastry, thawed
Instructions
- Preheat oven to 375°F and grease a muffin pan.
- Thaw and drain spinach, squeezing out moisture.
- Sauté onion and garlic in butter until fragrant, add spinach and cool.
- Mix spinach with parsley, feta, parmesan, egg, salt, and pepper.
- Roll out puff pastry, cut into rectangles, and fill.
- Fold corners of pastry and pinch to seal.
- Brush with egg wash and bake for 25-30 minutes until golden.
- Cool before serving.
