These Spring Brunch Puff Pastry Egg Tarts are a delightful combination of crispy pastry, savory bacon, and creamy egg filling, making them perfect for a quick and delicious brunch.

- 4 slices of original bacon, cut into 1 inch pieces
- 13 ounce puff pastry dough, thawed completely (not frozen)
- 4 eggs
- 1 tablespoon water
- 1/3 cup whole milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon dijon mustard
- 1 cup cheddar cheese, grated from the block
- 1/4 cup green onion for serving, sliced thinly on a bias
Instructions
- Preheat the oven to 375 degrees F. Cook the bacon in a skillet over medium low heat until crispy, then transfer to a paper towel lined plate to absorb excess grease.
- In a bowl, whisk together one egg and the water to create an egg wash.
- On a large cookie sheet lined with parchment paper, roll out the puff pastry and cut it into 8 rectangular pieces. Space them apart on the sheet. Create a border by running a paring knife around the inside of each piece and prick the centers with a fork before brushing with egg wash. Bake for 10 minutes.
- Whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper in a measuring cup for easy pouring.
- Once the puff pastry is baked, press down the centers with the back of a fork and pour the egg mixture into each tart without overfilling. Top with half of the grated cheddar cheese, being careful to keep the tarts from spilling over.
- Return the tarts to the oven and bake for another 10 minutes.
- Remove from the oven, sprinkle with the cooked bacon and remaining cheese, then bake for an additional 5 minutes.
- Garnish with sliced green onions and serve with dijonnaise sauce if desired.
Notes
For extra flavor, try adding different herbs or spices to the egg mixture.
These tarts can be made ahead of time and stored in the refrigerator until you’re ready to bake them fresh.
Serve with a side salad for a more complete meal.
