Description

  • 2 tablespoons unsalted butter, divided
  • 1 ½ cups (204 g) orzo pasta, uncooked
  • 3 cups (720 g / 24 ounces) chicken broth
  • 8 ounces baby bella mushrooms, sliced
  • ½ teaspoon kosher salt, divided
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 ½ teaspoons garlic, minced
  • ¾ cup (178.5 g) heavy whipping cream
  • 1 cup (100 g) parmesan cheese, freshly grated
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes, optional
  • 1 teaspoon fresh lemon juice
  • Fresh parsley chopped for garnish
  • 1 pound top sirloin steak, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter

Instructions

  1. Heat a large skillet over medium heat. Melt 1 tablespoon of butter, add the orzo, and toast for about 3 to 4 minutes until lightly golden.
  2. Add chicken broth to the orzo, bring to a boil, then reduce heat to low, cover, and simmer for 12 to 15 minutes until liquid is mostly absorbed and orzo is tender. Remove from heat and keep covered.
  3. In another large skillet, heat the remaining butter over medium-high heat. Add mushrooms in an even layer and let cook undisturbed for 2 to 3 minutes.
  4. Season mushrooms with a pinch of kosher salt, add onions, and cook until mushrooms are golden and moisture evaporates, about 5 to 6 minutes.
  5. Add minced garlic and cook for 30 seconds.
  6. Reduce heat to medium-low and stir in heavy cream, Parmesan cheese, remaining salt, black pepper, and red pepper flakes. Simmer for 2 to 3 minutes until slightly thickened.
  7. Stir in lemon juice.
  8. Add the mushroom sauce to the cooked orzo and stir until creamy and well combined. Keep warm while preparing the steak.
  9. Wipe the skillet used for mushrooms to cook the steak.
  10. Pat steak dry with paper towels and season with salt and pepper.
  11. Heat vegetable oil in the skillet over medium-high heat. Add steak in a single layer and cook for about 2 minutes without moving to form a crust. Flip and cook another 2 to 3 minutes until browned to desired doneness.
  12. Lower heat to medium-low, add butter, and spoon melted butter over steak for 30 seconds.
  13. Top the creamy mushroom orzo with the steak bites and garnish with parsley.
  14. Serve immediately.

Notes

For a richer flavor, you can use beef broth instead of chicken broth.
Feel free to add more vegetables like spinach or peas for extra nutrition.
For a spicier kick, increase the amount of red pepper flakes.
