Description

Enjoy these Strawberry Lemon Scones, bursting with fresh strawberries and zesty lemon flavor. Easy to make and perfect for breakfast or a delightful treat!


Ingredients

  • 11 1/2 cups Powdered Sugar
  • 23 tbsp lemon juice
  • 1 tsp lemon zest, optional
  • 2 cups + 2 tbsp flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp lemon zest
  • 1/2 cup butter, cold & cubed
  • 1 egg
  • 1/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla
  • 3/4 cup strawberries, diced

Instructions

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the cold, cubed butter with a fork until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together egg, heavy whipping cream, sour cream, lemon juice, and vanilla until just combined.
  5. Gently fold in the diced strawberries until just mixed.
  6. Turn the dough onto a floured surface and pat into a circle about 1 inch thick.
  7. Cut the dough into 8 triangles.
  8. Brush the tops of each scone with heavy cream.
  9. Bake for 15 minutes until lightly golden.
  10. In the meantime, whisk together 1 cup powdered sugar, 2 tbsp lemon juice, and optional lemon zest for glaze.
  11. Adjust glaze consistency as needed.
  12. Drizzle the glaze over the cooled scones.

Notes

Make sure the butter is very cold for a better texture.
You can adjust the sweetness of the glaze by adding more or less sugar according to your taste.
Variations can include adding a bit of orange zest for a different citrus flavor.
