Description

These Strawberry Pop Tart Cookies are filled with sweet strawberry jam and topped with creamy frosting. A delightful treat that’s easy to make and perfect for sharing!


Ingredients

  • 1 cup butter, salted
  • ¾ cup white granulated sugar
  • ¾ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2½3 cups all purpose flour
  • 1 cup strawberry jam
  • 4 oz. cream cheese, room temperature
  • 4 tablespoons salted butter, room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk or heavy whipping cream
  • 2 tablespoon multicolored or red sprinkles

Instructions

  • In a stand mixer or large bowl, beat together butter, white sugar, and brown sugar on high speed until light and fluffy, about 3 minutes, scraping sides.
  • Add the egg and vanilla extract, mixing on medium speed until well combined and fluffy.
  • Incorporate the salt and baking soda until just mixed.
  • Add the flour gradually, mixing on low speed until fully combined, about 1 minute.
  • Preheat the oven to 350°F and line baking sheets with parchment paper or silicone mats.
  • Using a ¼ cup scoop, form 12 balls of dough. Press a deep hole into each ball and spoon 1 tablespoon of strawberry jam inside. Seal the edges and roll into a smooth ball.
  • Repeat the filling process until all balls are prepared.
  • Place 6 cookie dough balls on one baking sheet and 6 on another.
  • Bake each sheet for 10-12 minutes, until the cookies begin to crack. Prepare frosting while baking, and let cookies cool completely before frosting.

Notes

Make sure the butter is at room temperature for easy mixing.
Chilling the dough for a short period before baking can enhance the texture of the cookies.
Decorate with extra sprinkles for a festive touch.
