Description

This Sweet Potato Pasta is a comforting and quick meal, filled with the delicious flavors of creamy sweet potatoes, garlic, and herbs—perfect for family dinners or cozy nights in.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium-sized onion, diced
  • 1 large garlic clove, minced
  • 1 teaspoon smoked paprika
  • 1 lb sweet potatoes, peeled and diced
  • ½ lb good-quality pasta (such as rigatoni, penne, or fusilli)
  • Approx. 3-4 cups water
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon thyme leaves
  • ¼ cup cream cheese
  • ¼ cup Parmesan cheese, grated
  • Freshly ground black pepper, to serve

Instructions

  • Heat olive oil in a pot over medium heat and sauté onion until soft.
  • Add minced garlic and smoked paprika, cooking until fragrant.
  • Stir in diced sweet potatoes and pasta; pour in water to cover.
  • Bring to a boil, then reduce to a simmer until pasta is al dente.
  • Mix in cream cheese and Parmesan until creamy; adjust seasoning to taste.
  • Serve hot, topped with more Parmesan or red pepper flakes.

Notes

Store cooled pasta in an airtight container for up to 4 days in the fridge.
For a twist, add cooked bacon or sautéed mushrooms for added flavor.
Make-ahead tip: Dice sweet potatoes and onions the day before to save prep time.
