- 1 lb sweet potatoes, peeled and diced
- ½ lb good-quality pasta (such as rigatoni, penne, or fusilli)
- Approx. 3-4 cups water
- 1 teaspoon salt (or to taste)
- 1 teaspoon thyme leaves
- ¼ cup cream cheese
- ¼ cup Parmesan cheese, grated
- Freshly ground black pepper, to serve
Instructions
- Heat olive oil in a pot over medium heat and sauté onion until soft.
- Add minced garlic and smoked paprika, cooking until fragrant.
- Stir in diced sweet potatoes and pasta; pour in water to cover.
- Bring to a boil, then reduce to a simmer until pasta is al dente.
- Mix in cream cheese and Parmesan until creamy; adjust seasoning to taste.
- Serve hot, topped with more Parmesan or red pepper flakes.
Notes
Store cooled pasta in an airtight container for up to 4 days in the fridge.
For a twist, add cooked bacon or sautéed mushrooms for added flavor.
