- 3 cups graham cracker crumbs
- 8 tablespoons butter (melted)
- 24 oz. cream cheese (room temperature)
- 1 cup granulated sugar
- 1/2 cup whole milk (room temperature)
- 1/2 cup sour cream (room temperature)
- 2 tablespoons all-purpose flour
- 1 teaspoon pure vanilla extract
- 4 large eggs (room temperature)
Instructions
- Preheat the oven to 350ºF and spray a 9-inch springform pan with nonstick spray, lining the bottom with parchment paper.
- Combine graham cracker crumbs and melted butter until they resemble wet sand.
- Press the crumb mixture into the bottom of the springform pan evenly to form a crust.
- Par-bake the crust for 8 minutes, then let it cool while preparing the filling.
- In a stand mixer, beat cream cheese until light and smooth for about 1-2 minutes.
- Mix in sugar, whole milk, sour cream, flour, and vanilla until just combined, scraping down the bowl as needed.
- Add eggs one at a time at low speed, allowing each to fully incorporate before adding the next.
- Pour the cheesecake filling over the crust and smooth the top.
- Bake for 55-60 minutes until edges are set and the center slightly jiggles when shaken.
- Turn off the oven and crack the door, letting the cheesecake cool inside for an hour to reduce cracks.
- Transfer the cheesecake to the refrigerator and chill for at least 6 hours (preferably overnight).
- To serve, run a knife under hot water to warm it, clean it, and run it around the edge of the springform pan to release.
- Carefully remove the sides of the pan and transfer the cheesecake to a serving dish.
- Slice and serve with fresh berries, whipped cream, or chocolate sauce.
Notes
Make sure all ingredients are at room temperature for the best mixing result.
For a richer flavor, allow the cheesecake to chill overnight before serving.
