- 1/3 cup confectioners' sugar
- 1 tablespoon espresso powder

- 1/2 cup unsalted butter, softened
- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- 8 ounces mascarpone cheese
- 1/2 cup heavy cream
- 3/4 cup confectioners' sugar
- 1 teaspoon vanilla (for topping)
- 1 tablespoon cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine flour, confectioners’ sugar, espresso powder, baking soda, baking powder, and salt.
- In another bowl, whisk together white sugar and softened butter until light. Add egg and vanilla, then mix until fluffy.
- Gradually combine dry ingredients with wet, mixing to form a uniform dough without overmixing.
- Scoop dough onto prepared sheets and bake for 13-14 minutes.
- Cool cookies, then prepare topping by beating mascarpone, heavy cream, confectioners’ sugar, and vanilla until peaks form.
- Pipe topping onto cooled cookies and dust with cocoa powder.
Notes
Store cookies in an airtight container for up to 2 days at room temperature.
For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
For more intense flavor, add extra teaspoon of espresso powder.
