Ingredients
- Ground beef or chicken (1½ lb)
- Eggs (2)
- Breadcrumbs (½ cup)
- Brown sugar (1 tbsp)
- Gochujang (1 tbsp)

- Red onion (1 tbsp, chopped)
- Ginger (1-inch piece, grated)
- Soy sauce (2 tbsp)
- Sesame oil (2 tbsp)

- Black pepper (¼ tsp)
- For the glaze:
- Soy sauce (5 tbsp)
- Sesame oil (2 tbsp)
- Rice vinegar (1 tbsp)
- Gochujang (1 tbsp)
- Honey or brown sugar (2 tbsp)
- Minced garlic (1 tsp)
- Minced ginger (1 tsp)
- Cornstarch mixed with water (1 tsp cornstarch + 2½ tbsp water)
- For the spicy mayo dip:
- Mayonnaise (½ cup)
- Honey (1 tsp)
- Sweet chili sauce (1 tbsp)
- Garlic powder (½ tsp)
- Lime juice (1 tbsp)
- Toppings: Sesame seeds and chopped green onions
Instructions
- Combine ground beef or chicken, eggs, breadcrumbs, brown sugar, gochujang, garlic, onion, ginger, soy sauce, sesame oil, salt, and pepper in a bowl.
- Form mixture into 1 to 1½-inch meatballs and place on a tray.
- Pan-fry, bake, or air fry meatballs to cook.
- Prepare the glaze by simmering soy sauce, sesame oil, rice vinegar, gochujang, honey, garlic, and ginger, then add cornstarch slurry to thicken.
- Coat cooked meatballs with the glaze in a bowl.
- Mix mayonnaise, honey, sweet chili sauce, garlic powder, and lime juice for spicy mayo dip.
- Serve meatballs garnished with sesame seeds and green onions alongside the dip.
