Description

These Valentine strawberry yogurt bites combine creamy yogurt, fresh strawberries, and crunchy granola for a delightful and easy treat. Perfect for a sweet snack or healthy dessert!


Ingredients

  • ½ cup granola, more for topping
  • 1 cup yogurt of choice
  • ½ cup fresh strawberries, hulled and diced
  • ¾ cup fresh strawberries, sliced or chopped
  • ¼ cup granola, smaller pieces work better

Instructions

  • Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup. Set aside.
  • In a medium bowl, combine yogurt and diced strawberries. Mash the fruits into the yogurt using a fork or pastry cutter, leaving some chunks for texture. Stir until well mixed.
  • Spoon 2 tablespoons of the yogurt mixture into each cup, smoothing it out evenly.
  • Press about 1 tablespoon of sliced strawberries into the top of each cup.
  • Sprinkle granola on top of the strawberries, using about 1 teaspoon per cup.
  • Place the pan in the freezer and chill until firm, about 2-4 hours.
  • Pop out the frozen yogurt bites and let them thaw for a few minutes before enjoying.

Notes

You can substitute yogurt with dairy-free options for a vegan version.
For extra flavor, add a drizzle of honey or maple syrup into the yogurt mixture.
These bites can be stored in the freezer and make a great snack on-the-go.
