Ingredients
Scale
- ½ cup granola, more for topping
- 1 cup yogurt of choice
- ½ cup fresh strawberries, hulled and diced
- ¾ cup fresh strawberries, sliced or chopped
- ¼ cup granola, smaller pieces work better
Instructions
- Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each cup. Set aside.
- In a medium bowl, combine yogurt and diced strawberries. Mash the fruits into the yogurt using a fork or pastry cutter, leaving some chunks for texture. Stir until well mixed.
- Spoon 2 tablespoons of the yogurt mixture into each cup, smoothing it out evenly.
- Press about 1 tablespoon of sliced strawberries into the top of each cup.
- Sprinkle granola on top of the strawberries, using about 1 teaspoon per cup.
- Place the pan in the freezer and chill until firm, about 2-4 hours.
- Pop out the frozen yogurt bites and let them thaw for a few minutes before enjoying.
Notes
You can substitute yogurt with dairy-free options for a vegan version.
For extra flavor, add a drizzle of honey or maple syrup into the yogurt mixture.
These bites can be stored in the freezer and make a great snack on-the-go.
