- ½ teaspoon dried lavender
- ½ medium lemon, zested

- 3 ounces soft goat cheese
- 1 ounce ricotta cheese
- 1 tablespoon fresh thyme leaves
- 1 tablespoon honey (orange blossom recommended)
- 3 large eggs (separated)
- ¼ cup low-fat milk
- 2 teaspoons all-purpose flour

Instructions
- Preheat the oven to 375˚ F. Butter the ramekins and sprinkle Parmesan cheese on the bottoms and sides. Set aside.
- Crush dried lavender into a powder, then mix with lemon zest, 1 tablespoon Parmesan, salt, and pepper in a small bowl.
- In a medium bowl, blend goat cheese, ricotta, 2 tablespoons Parmesan, thyme, honey, egg yolks, milk, and flour until well combined.
- Whip egg whites in a small bowl until firm peaks form, then gently fold them into the cheese-yolk mixture in thirds, avoiding smoothness for a good rise.
- Position the ramekins in a baking dish and add hot water halfway up the sides. Spoon the cheese-egg mixture into the ramekins, filling them two-thirds full.
- Wipe the rims of the ramekins to ensure a clean rise during baking.
- Bake for 20 minutes until browned and firm. Let soufflés cool in ramekins for 15 minutes.
- Run a knife around the edges to gently release the soufflés and either serve on plates or in the ramekins.

For extra flavor, try using different herbs like chives or dill.
Ensure the egg whites are whipped to just firm peaks for optimal fluffiness.
