Description

These Valentines Love Letter Pastries feature a flaky outer crust and sweet strawberry jam filling. They are quick to make and perfect for expressing love on any occasion.


Ingredients

  • Plain Flour (2 cups)
  • Caster Sugar (2 tablespoons)
  • Dairy-Free Block Butter (1 cup, cold and cubed)
  • Ice-Water
  • Vegan-Friendly Strawberry Jam (1 jar)
  • Dairy-Free Milk (for brushing, optional)
  • Icing Sugar (for dusting, optional)

Instructions

  • Combine plain flour and caster sugar in a bowl and mix well.
  • Blend in cold, cubed dairy-free butter until the mixture resembles fine breadcrumbs.
  • Gradually add ice-water, mixing until the dough comes together.
  • Wrap the dough in greaseproof paper and refrigerate for about 30 minutes.
  • Preheat oven to 340°F (170°C) and line two baking trays with greaseproof paper.
  • Roll out the chilled dough and cut into diamond shapes.
  • Fill each diamond with strawberry jam and fold to seal into an envelope shape.
  • Brush tops with dairy-free milk and sprinkle with sugar.
  • Bake for 20-25 minutes until golden brown and cool before serving.

Notes

Store pastries in an airtight container at room temperature for up to three days.
These pastries can be made ahead and baked fresh later.
Use cold butter to ensure flaky layers. If the dough is sticky, sprinkle with flour.
