- 2 large apples (peeled, grated, & strained)
- 1/2 cup oat milk
- 2/3 cup sugar
- 1/3 cup olive oil
- 1 teaspoon vanilla bean paste (or vanilla extract)
- 1 1/2 cups pastry flour
- 2 teaspoons baking powder
- 1 teaspoon apple pie spice (or pumpkin pie spice)
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 tablespoons vegan butter
- 6 tablespoons vegan cream cheese
- 2–3 teaspoons cornstarch
- 1 1/3– 1 1/2 cups powdered sugar
- 1/2 teaspoon ground cinnamon (or apple pie spice)
Instructions
- Preheat oven to 350°F (175°C) and prepare an 8×8 inch pan with parchment or oil.
- Grate and strain the apples to remove excess juice.
- Whisk together the wet ingredients in a large bowl until smooth.
- Combine dry ingredients with the wet mixture until just incorporated.
- Pour batter into prepared pan and bake for 30-32 minutes until golden and tested clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare frosting by whipping vegan butter, cream cheese, and cornstarch until fluffy.
- Gradually fold in powdered sugar and cinnamon for taste and texture.
- Frost cooled cake and optionally decorate with more cinnamon or apple slices.
