Description

This Vegan Apple Cake with Cinnamon Cream Cheese Frosting is a comforting dessert that combines the warm flavors of cinnamon and sweet apples. Quick to prepare and wholly delicious, it’s a must for any occasion!


Ingredients

  • 2 large apples (peeled, grated, & strained)
  • 1/2 cup oat milk
  • 2/3 cup sugar
  • 1/3 cup olive oil
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon apple pie spice (or pumpkin pie spice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 6 tablespoons vegan butter
  • 6 tablespoons vegan cream cheese
  • 23 teaspoons cornstarch
  • 1 1/31 1/2 cups powdered sugar
  • 1/2 teaspoon ground cinnamon (or apple pie spice)

Instructions

  • Preheat oven to 350°F (175°C) and prepare an 8×8 inch pan with parchment or oil.
  • Grate and strain the apples to remove excess juice.
  • Whisk together the wet ingredients in a large bowl until smooth.
  • Combine dry ingredients with the wet mixture until just incorporated.
  • Pour batter into prepared pan and bake for 30-32 minutes until golden and tested clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare frosting by whipping vegan butter, cream cheese, and cornstarch until fluffy.
  • Gradually fold in powdered sugar and cinnamon for taste and texture.
  • Frost cooled cake and optionally decorate with more cinnamon or apple slices.

Notes

Strain apples well to prevent a soggy cake.
Use room temperature ingredients for better blending in the frosting.
