Description

This Warm Balsamic Chicken Tortellini Salad is a flavor-packed dish featuring tender chicken, creamy tortellini, and vibrant vegetables, ideal for a quick and satisfying meal.


Ingredients

  • 2 chicken breasts, sliced
  • 1 pound asparagus
  • 3/4 cup shredded carrots
  • 3/4 cup grape tomatoes, sliced
  • 1 20-ounce package cheese tortellini
  • Fresh minced basil, optional, for garnish
  • 1 tablespoon olive oil
  • 1/4 cup Italian dressing
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/8 teaspoon crushed red chili pepper flakes
  • 1 teaspoon salt

Instructions

  • Cook the cheese tortellini according to package instructions and keep warm.
  • Whisk together Italian dressing, balsamic vinegar, honey, and red pepper flakes to make the dressing.
  • Heat olive oil in a frying pan and cook the sliced chicken, seasoning with salt until golden and cooked through.
  • Add dressing mix to chicken and simmer for 1 minute to infuse flavor.
  • Sauté chopped asparagus in the same pan for about 3 minutes, adding shredded carrots and sliced tomatoes just before removing from heat.
  • Combine cooked chicken, asparagus, tortellini, and remaining dressing; toss gently to mix.
  • Garnish with fresh basil and serve warm.

Notes

Feel free to use pre-cooked, shredded rotisserie chicken to save time.
Customize the vegetable mix based on what’s in season or what you have on hand.
