- 1/4 cup (60 ml) whipping cream or heavy cream
- 4 ounces (112 grams) full-fat cream cheese
- 1/3 cup (56 grams) white chocolate chopped and melted
- 1/2 cup (120 grams) plain greek yogurt
- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- Beat the cream in a small bowl with an electric mixer until stiff peaks form, being cautious not to over mix.
- In a medium bowl, mix the cream cheese and melted white chocolate together using the same beaters. Add the Greek yogurt and combine well, then stir in the mashed raspberries.
- Carefully fold in all but a tablespoon of whipped cream, retaining the tablespoon for topping. Aim to keep the mousse airy and light. Spoon the mixture into two serving glasses.
- Serve immediately or chill for up to eight hours. The mousse thickens to a cheesecake-like texture when fresh, but softens into a traditional mousse consistency after chilling.
- Top with the reserved whipped cream and garnish with fresh raspberries, if desired.
Notes
Make sure the cream cheese is at room temperature for easier mixing.
The mousse can be made a day ahead and stored in the refrigerator until serving.
