Description

This Apple Baked Oatmeal combines warm spices and soft apples for a cozy breakfast. Perfect for any occasion, it’s an easy and delightful option for family gatherings or quick snacks.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 2 medium Honey Crisp apples, diced
  • 1/4 cup coconut sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 2 large eggs
  • 1 cup milk of choice
  • 1/4 cup unsalted butter, melted
  • 2 tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
  • 1/2 cup full-fat canned coconut milk
  • 2 tbsp powdered sugar

Instructions

  • Preheat oven to 350°F and spray a casserole dish.
  • Mix rolled oats, shredded coconut, chopped apples, coconut sugar, cinnamon, sea salt, and baking powder.
  • Whisk eggs, milk, melted butter, lemon juice, and vanilla in a separate bowl.
  • Combine wet and dry ingredients until well mixed.
  • Transfer mixture to the baking dish and bake for 40-50 minutes until golden brown.
  • Cool, slice, and serve with coconut milk glaze.

Notes

For vegan option, use flax eggs and coconut oil.
Substitute honey crisp apples with your favorite apple variety.
Ensure baking powder is fresh for the best rise.
