- 2 large eggs
- 1 cup milk of choice
- 1/4 cup unsalted butter, melted
- 2 tbsp fresh lemon juice
- 1 tsp pure vanilla extract
- 1/2 cup full-fat canned coconut milk
- 2 tbsp powdered sugar
Instructions
- Preheat oven to 350°F and spray a casserole dish.
- Mix rolled oats, shredded coconut, chopped apples, coconut sugar, cinnamon, sea salt, and baking powder.
- Whisk eggs, milk, melted butter, lemon juice, and vanilla in a separate bowl.
- Combine wet and dry ingredients until well mixed.
- Transfer mixture to the baking dish and bake for 40-50 minutes until golden brown.
- Cool, slice, and serve with coconut milk glaze.
