- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil
- Chopped parsley for garnish
- Lemon wedges for garnish
Instructions
- Preheat your oven to 400 degrees F.
- Pat dry the cod filet using a kitchen towel and set it aside.
- Create the breading station: in the first bowl, mix together flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
- In the second bowl, whisk together the eggs and a splash of water until combined.
- In the third bowl, combine panko breadcrumbs and dried parsley.
- Start by coating the cod filet in the flour mixture, then dip in the egg mixture, and finally coat with breadcrumbs until evenly covered.
- Arrange the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
