  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 tablespoon poppy seeds
  • 1 pint fresh blackberries, rinsed
  • ⅓ cup avocado oil
  • ½ cup all-natural maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 large eggs
  • ⅓ cup + 3 tablespoons almond milk, separated
  • 1 tablespoon reserved smashed blackberries
  • ½ cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 350℉ and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together the dry ingredients and set them aside.
  3. Smash the blackberries in a bowl using a fork or the back of a spoon, then set aside.
  4. In a large mixing bowl, combine the oil, syrup, vanilla, lemon juice, lemon zest, eggs, and ⅓ cup of almond milk, whisking until well combined.
  5. Gradually add the dry ingredients to the wet mixture, whisking until just combined.
  6. Divide the batter into two bowls. Set aside one tablespoon of smashed blackberries for later and mix the rest into one bowl of batter, turning it purple.
  7. In the second bowl of batter, add the remaining 3 tablespoons of almond milk and stir well.
  8. Using a large cookie scoop or ladle, alternate pouring layers of each batter into the loaf pan.
  9. Bake for 25 minutes, rotate the pan, and bake for another 25 minutes, or until a toothpick inserted comes out with a few crumbs.
  10. While the loaf cools, prepare the icing by mixing the reserved smashed blackberries with the icing ingredients and drizzle it over the loaf.

Notes

For optimal texture, ensure ingredients are at room temperature before mixing.
Feel free to substitute blackberries with any berries of your choice.
