- ½ medium yellow onion, diced
- â…“ cup beef broth (or water as sub)
- For bowl assembly: Chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, hamburger dill chips, and sliced avocado- as desired
Instructions
- In a high-speed blender or food processor, blend the sour cream, mayonnaise, buttermilk, chipotle peppers, garlic paste, Sazon seasoning, parsley, and salt/pepper until smooth. Store in an airtight container in the refrigerator.
- Preheat the oven to 425°F. Line a baking sheet with foil or parchment paper and place a wire rack on it.
- In a large bowl, mix the sweet potato wedges with 2 tablespoons of olive oil and Cajun seasoning until coated. Arrange on the baking sheet.
- Bake at 425°F for 40 minutes, until the wedges are fork-tender and crispy. Meanwhile, prepare the beef.
- In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the ground beef and brown it, breaking it up with a wooden utensil.
- Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the remaining Cajun seasoning and then add the beef broth. Allow it to simmer until most liquid is absorbed.
- In serving bowls, layer romaine lettuce, baked sweet potato wedges, other toppings, cooked ground beef, and drizzle the chipotle ranch over everything.
