- 1 medium head green cabbage (~2 pounds), cored and chopped into 1½-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon fine sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly cracked black pepper
- optional toppings: fresh lemon juice, grated parmesan
Instructions
- Preheat your oven to 425°F (220°C).
- Place cabbage pieces onto a baking sheet. Drizzle olive oil, sprinkle salt, pepper, garlic powder, and paprika over the cabbage, then toss until evenly coated. Spread the cabbage into a single layer on the baking sheet.
- Roast the cabbage for 20–25 minutes, tossing once at the 15-minute mark, until it becomes tender and has nicely caramelized edges.
- For added color and crispiness, broil the cabbage for 1–2 minutes, observing closely to avoid burning.
- Remove from the oven and add any optional toppings. Check the seasoning, adjust if needed, and serve warm.

Feel free to experiment with additional spices or seasonings to suit your taste.
