Description

These Cadbury Egg Cookie Bars offer a delightful combination of chocolate and Easter treats in an easy-to-make dessert. Perfect for sharing or enjoying at home, they are made with simple ingredients like chocolate chips, M&M’s, and creamy Cadbury eggs for a sweet, special treat anyone will cherish.


Ingredients

  • 2 & 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup unsalted butter browned and cooled down to room temperature
  • 2/3 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs at room temperature
  • 2/3 cup semi-sweet chocolate chips
  • 1/2 cup pastel easter m&m’s
  • 1/2 cup crushed cadbury mini eggs the candy-coated ones
  • 812 cadbury crème-filled mini eggs halved (for topping)

Instructions

  1. Melt the butter in a medium saucepan over medium heat, stirring constantly until golden brown and nutty. Let it cool for 10-15 minutes.
  2. Whisk together the flour, baking soda, and salt in a medium bowl, then set aside.
  3. In a large bowl, mix the cooled butter with granulated sugar, brown sugar, and vanilla until smooth. Add the eggs and mix until well combined.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. Fold in chocolate chips, pastel M&M’s, and crushed Cadbury mini eggs gently. Cover the dough and chill in the fridge for 30-60 minutes.
  6. Preheat the oven to 350°F and prepare a 13.8×10 jelly roll pan with parchment paper or cooking spray.
  7. Spread the chilled dough evenly in the prepared pan, optionally reserving some M&M’s and chocolate chips for decoration on top.
  8. Bake for 18-22 minutes, until the edges are golden brown and the center looks set. Avoid overbaking.
  9. Remove from oven and gently press halved crème-filled Cadbury eggs on top while the bars are still hot. Allow to cool completely before cutting.

Notes

Make sure the butter is cooled to room temperature before mixing to avoid cooking the eggs.
For a sweeter touch, add extra M&M’s on top before baking.
These bars can be stored in an airtight container for up to a week.
