Description

These Carrot Easter Rice Krispie Treats are a delightful treat packed with flavor and color. Easily made with butter, marshmallows, rice cereal, and candy melts, they offer a fun twist for any occasion or celebration.


Ingredients

Scale
  • ½ cup butter
  • 20 oz mini marshmallows
  • 9 oz box rice crispy cereal
  • 2 tsp vanilla
  • ½ tsp salt
  • red and orange food coloring
  • 1 cup green candy melts
  • 1 cup orange candy melts
  • orange sprinkles

Instructions

  1. Line a 9×13 pan with parchment paper.
  2. Melt butter in a large pot on medium-low heat.
  3. Add 1 ½ bags of mini marshmallows into the pot and set the other marshmallows aside.
  4. Stir the butter and marshmallows with a rubber spatula until completely melted, keeping heat on low.
  5. Remove from heat and stir in vanilla, salt, and the food coloring, adjusting color as needed.
  6. Add half of the rice crispy cereal to the marshmallow mixture and mix thoroughly.
  7. Incorporate the remaining marshmallows and rice cereal into the mixture.
  8. Pour into the prepared pan and spread evenly.
  9. Allow to cool for 10-15 minutes before transferring to a cutting board.
  10. Cut into 8 equal sections by halving lengthwise and making three cuts width-wise.
  11. Cut each rectangle into triangles to form carrot shapes.
  12. Melt the green candy melts in a microwave-safe bowl in 30-second increments, stirring in between.
  13. Pipe out 12 V-shaped stems on parchment paper and refrigerate for 10 minutes to harden.
  14. Gently flip the rice krispie treats onto parchment paper, cutting into carrot shapes.
  15. Melt the orange candy melts and drizzle over the carrot shapes, then add sprinkles immediately.
  16. Place a dot of orange candy melt on the top of each carrot and attach the stem.
  17. Let sit for a few minutes before serving.

Notes

Ensure to use a rubber spatula for better mixing of marshmallows and butter.
Control the amount of food coloring for the best flavor and color balance.
Store any leftover treats in an airtight container.
