Description

Chicken Marbella shines with its delicious blend of olives, prunes, and aromatic herbs. It’s an effortless and flavorful option for dinner, ensuring a satisfyingly tasty meal that your family will love.


Ingredients

  • 6 garlic cloves
  • 1/4 cup fresh basil, chopped
  • 2 tsp dried oregano
  • 2 bay leaves
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 cup brown sugar
  • 1 cup green olives, pitted
  • 1 cup pitted prunes
  • 2 tbsp capers
  • 1 tsp salt
  • 4 pounds chicken thighs
  • 1 cup white wine
  • 1/4 cup chopped parsley

Instructions

  1. Peel and chop the garlic cloves, using a mini food processor if desired.
  2. In a large glass or ceramic bowl, combine the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add the green olives, pitted prunes, capers, a pinch of salt, and chicken thighs to the mixture, ensuring the chicken is well coated.
  4. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  5. Preheat the oven to 180C/350F and arrange the chicken and marinade in a large baking pan or two smaller pans.
  6. Pour the white wine around the chicken, avoiding direct contact to maintain a crispy skin.
  7. Roast for 50 minutes to 1 hour, or until the chicken reaches an internal temperature of 74C/165F and the skin is golden.
  8. Sprinkle with chopped parsley before serving.

Notes

Marinating overnight intensifies the flavors.
Ensure the chicken is arranged without overcrowding for even cooking.
