- 6 garlic cloves
- 1/4 cup fresh basil, chopped
- 2 tsp dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives, pitted
- 1 cup pitted prunes
- 2 tbsp capers
- 1 tsp salt
- 4 pounds chicken thighs
- 1 cup white wine
- 1/4 cup chopped parsley
Instructions
- Peel and chop the garlic cloves, using a mini food processor if desired.
- In a large glass or ceramic bowl, combine the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, a pinch of salt, and chicken thighs to the mixture, ensuring the chicken is well coated.
- Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
- Preheat the oven to 180C/350F and arrange the chicken and marinade in a large baking pan or two smaller pans.
- Pour the white wine around the chicken, avoiding direct contact to maintain a crispy skin.
- Roast for 50 minutes to 1 hour, or until the chicken reaches an internal temperature of 74C/165F and the skin is golden.
- Sprinkle with chopped parsley before serving.
Notes
Marinating overnight intensifies the flavors.
