Description

Ingredients

  • Cottage Cheese (2 cups, 4% fat)
  • Grated Parmesan Cheese (1/2 cup)
  • Half and Half (1/4 cup)
  • Garlic Powder (1 teaspoon)
  • Onion Powder (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black Pepper (1/2 teaspoon)
  • Linguine (1 pound)
  • Pasta Water (1/2 cup)
  • Chopped Fresh Parsley (2 tablespoons)
  • Extra Grated Parmesan

Instructions

  • Boil the pasta in salted water until tender, then drain.
  • Blend cottage cheese, Parmesan, half and half, garlic powder, onion powder, salt, and black pepper until smooth.
  • Heat the blended sauce in a skillet over medium heat until warmed through but not boiling.
  • Combine drained pasta with heated sauce, adding reserved pasta water as needed for consistency.
  • Serve immediately, garnished with parsley and extra Parmesan.
