Description

This creamy chicken orzo bake features tender chicken, orzo pasta, and rich cheesy goodness, making it an ideal quick dinner option or comfort meal. Easy to prepare and packed with flavor!


Ingredients

  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 casserole dish with nonstick spray. Set aside.
  2. Whisk together the chicken broth, dry white wine, and cream of chicken soup until well blended. Stir in orzo, mushrooms, and onion soup mix. Pour this mixture into the prepared casserole dish.
  3. Season chicken breasts with garlic powder, onion powder, salt, and pepper on both sides. Place the seasoned chicken on top of the orzo mixture in the casserole dish. Cover it tightly with foil.
  4. Bake for 55 to 60 minutes, removing the foil after the first 30 minutes. Ensure chicken is cooked through and orzo is tender, adding an additional 5 minutes uncovered if needed for excess liquid.
  5. Once cooked, turn off the oven and sprinkle mozzarella and parmesan cheeses on top of the chicken. Place it back in the warm oven for 3 to 5 minutes until cheeses melt.
  6. Remove the casserole from the oven and let it rest for 5 minutes. Fluff orzo with a fork before serving and garnish with additional parmesan cheese and fresh chopped parsley, if desired.

Notes

For a lighter version, substitute half of the mozzarella with a lower-fat cheese.
Use fresh herbs like thyme or parsley for added flavor before serving.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
