  • 3 cloves minced garlic
  • 1 cup orzo (uncooked)
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  • Whisk together olive oil, lemon juice, mustard, paprika, garlic powder, salt, and pepper in a bowl for the marinade.
  • Marinate salmon filets for at least 10 minutes in this mixture.
  • Heat olive oil in a skillet and sear the salmon for 3-4 minutes per side until golden and cooked through.
  • In a separate pan, melt butter with olive oil, sauté onion until soft, then add minced garlic and orzo, toasting for 2-3 minutes.
  • Pour in chicken broth, cream, and more lemon juice; simmer until orzo is tender and creamy, about 8-10 minutes.
  • Stir in Parmesan cheese until melted and creamy.
  • Top orzo with seared salmon, garnish with parsley, and serve warm.

Notes

Ensure fresh lemon juice is used for the best flavor.
The orzo can be substituted with gluten-free pasta if needed.
For a lighter dish, consider reducing the amount of cream used.
