- 1 cup pumpkin puree
- ½ cup cream cheese

- ¼ teaspoon dried thyme
- ¼ teaspoon cayenne pepper
- 1 teaspoon salt
Instructions
- Boil the pasta in salted water until al dente, reserving pasta water before draining.
- Sauté minced garlic in olive oil for 2-3 minutes until fragrant.
- Mix in pasta water, pumpkin puree, cream cheese, Parmesan, sage, thyme, cayenne, and salt over medium heat until smooth.
- Combine drained pasta with the sauce, adding more reserved pasta water if needed for desired texture.
- Serve warm, topped with olive oil and extra Parmesan.
Notes
Avoid overcooking garlic as it can become bitter.
Save more pasta water than you think you need to adjust sauce consistency.
