Description

This Crockpot Bacon Cheeseburger Tortellini is a delightful blend of savory ground beef, crispy bacon, and creamy cheese tortellini, making it the perfect comfort food for quick dinners or cozy family nights.


Ingredients

  • 1 pound ground beef browned and drained
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ cup diced onion
  • 12 slices bacon cooked and crumbled, divided
  • 1 14.5-ounce can diced tomatoes, drained
  • 1 1/2 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon yellow mustard
  • 20 ounces refrigerated cheese tortellini
  • 1½ cups shredded cheddar cheese

Instructions

  1. Place the ground beef, diced onion, salt, black pepper, garlic powder, paprika, half of the crumbled bacon, and drained diced tomatoes in the slow cooker.
  2. Add beef broth, tomato sauce, and mustard to the mixture, stirring until well combined.
  3. Cover and cook on low for approximately 3 hours to let flavors meld together.
  4. Stir in the cheese tortellini, ensuring they are primarily submerged in the sauce.
  5. Continue cooking for another 30 to 40 minutes until the tortellini are tender.
  6. Mix in the shredded cheddar cheese and stir until it melts into the sauce, creating a creamy texture.
  7. Sprinkle the remaining bacon on top and let the dish sit for about 5 minutes before serving to thicken the sauce.

Notes

For added flavor, use smoked bacon instead of regular.
If you prefer a spicier dish, add red pepper flakes to taste.
This dish can easily be made ahead and reheated for convenient meals.
