Ingredients

  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers (green, yellow, and red, sliced into strips)
  • 1 large yellow onion (sliced)
  • 4 cloves garlic (minced)
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice (1 lime)
  • Soft shell fajita tortillas (warmed, optional for serving)
  • Fresh chopped cilantro (optional for serving)
  • Sour cream (optional for serving)

Instructions

  1. Place the diced tomatoes, sliced peppers, sliced onion, minced garlic, and chicken into a 6-quart or larger slow cooker.
  2. Sprinkle the fajita seasoning mix and black pepper over the chicken, then drizzle in the lime juice.
  3. Cover and cook on low for 6–8 hours or high for about 4 hours until the chicken is tender and fully cooked.
  4. Remove the chicken from the cooker and shred it using two forks, then return the shredded chicken to the slow cooker and mix with the vegetables and juices.
  5. Serve in warmed tortillas and garnish with cilantro and sour cream if desired.

Notes

Feel free to customize the vegetables based on your preference.
This dish can also be served over rice for a different twist.
For extra flavor, marinate the chicken in seasoning a few hours before cooking.
