Description

  • 3 large onions (or 4 medium onions)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 4 ounces cream cheese (half brick, softened)
  • 1/2 cup mayonnaise
  • 2 teaspoons hot sauce (optional)

Instructions

  1. Prepare the onions by halving each onion, discarding the ends and peeling them. Slice each half into thin strips.
  2. Place all sliced onions in the crockpot. Drizzle with olive oil, season with salt and pepper, and mix to coat. Cover and cook on low for 8 hours.
  3. To make the dip, stir in sour cream, softened cream cheese, mayonnaise, and optional hot sauce. Mix until fully combined. Taste and adjust seasoning with salt and pepper as necessary. For a thicker dip, remove the onions and drain excess juices, if desired.
  4. For a hot dip, keep in the slow cooker on the 'keep warm' setting. For a cold dip, transfer to a container and chill for at least 1 hour before serving.
