  • 2 pounds lean ground beef

  • 1 package mild taco seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 can (15 oz) mild red enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup chunky salsa
  • 6 oz corn tortilla chips
  • 2 cups shredded Mexican cheese blend
  • 1 avocado, sliced
  • 1 cup sour cream
  • 1 can (14.5 oz) diced tomatoes, drained
  • ¼ cup fresh chopped cilantro
  • 2 lime wedges

Instructions

  • Prepare the crockpot with nonstick spray.
  • Sauté ground beef and onions until browned.
  • Mix in taco seasoning, sauces, and beans for flavor.
  • Layer the meat mixture, tortilla chips, and cheese in the crockpot.
  • Cook on high for 2 hours, then add more cheese and cook on low for an additional 20-30 minutes.
