- 1 medium red onion, chopped small
- 4 cloves garlic, minced
- 2 jalapeño peppers, seeded and chopped
- 2 (15-ounce) cans black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro
- vegan cheese, optional
- pickled red onions, optional
Instructions
- Warm olive oil in a small pan over medium heat.
- Add chopped red onion, garlic, and jalapeño peppers, sauté for 5-8 minutes, stirring frequently. Remove from heat.
- In a food processor, add drained and rinsed black beans, cooked onion mixture, cumin, salt, lime juice, and cilantro. Process until the desired smoothness is reached, leaving some chunks if preferred.
- Transfer the mixture to a serving dish, top with extra cilantro, vegan cheese, and pickled red onions if using. Serve with tortilla chips.
Notes
Adjust salt to taste depending on personal preference.
For a spicier dip, keep the seeds from the jalapeños or use additional peppers.
