Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium red onion, chopped small
  • 4 cloves garlic, minced
  • 2 jalapeño peppers, seeded and chopped
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 3 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro
  • vegan cheese, optional
  • pickled red onions, optional

Instructions

  1. Warm olive oil in a small pan over medium heat.
  2. Add chopped red onion, garlic, and jalapeño peppers, sauté for 5-8 minutes, stirring frequently. Remove from heat.
  3. In a food processor, add drained and rinsed black beans, cooked onion mixture, cumin, salt, lime juice, and cilantro. Process until the desired smoothness is reached, leaving some chunks if preferred.
  4. Transfer the mixture to a serving dish, top with extra cilantro, vegan cheese, and pickled red onions if using. Serve with tortilla chips.

Notes

Adjust salt to taste depending on personal preference.
For a spicier dip, keep the seeds from the jalapeños or use additional peppers.
This dip can be made ahead of time and stored in the fridge.
