Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 2 tbsp curry powder (for marinade)
  • 1 cup Greek yogurt
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1 medium onion (diced)
  • 15 ounces tomato sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream
  • 1/4 tsp cayenne pepper
  • 1 tsp garam masala
  • 1 tbsp curry powder (for sauce)
  • 2 tbsp fresh parsley (chopped)
  • 4 pieces naan bread
  • 2 cups steamed rice

Instructions

  • Marinate chicken with spices and yogurt for at least 15 minutes.
  • Cook marinated chicken in oil until golden brown and cooked through.
  • Sauté garlic and onion in butter until translucent.
  • Add tomato sauce and sugar, simmer briefly, then return chicken to the skillet.
  • Stir in heavy cream, adjust seasoning, and simmer for 10 minutes.
  • Finish with cold butter for a rich texture and serve hot with naan and rice.

Notes

Use chicken breasts if preferred, but thighs yield more flavor.
