Ingredients

  • 2 skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp brown sugar
  • 2 cloves minced garlic
  • 1 tsp ground ginger
  • 4 cups chicken broth
  • 2 packs ramen noodles
  • 2 egg yolks
  • 2 tbsp mayonnaise
  • 2 boiled eggs
  • 2 scallions, sliced
  • 1 cup bok choy, chopped

Instructions

  • Marinate the chicken with soy sauce, mirin, brown sugar, garlic, and ginger.
  • Cook the chicken in a skillet until golden, adding the marinade.
  • Prepare toppings: boil eggs and blanch bok choy.
  • In a pot, simmer chicken broth, soy sauce, and mirin. Cook ramen noodles until tender.
  • In serving bowls, mix egg yolks and mayonnaise.
  • Assemble ramen by adding noodles and broth, topped with chicken, bok choy, scallions, and boiled eggs.

Notes
