- 1 English cucumber
- 1 teaspoon kosher salt
- 12 ounces Campari tomatoes
- 1/4 small red onion
- 3 tablespoons champagne vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/3 cup chopped fresh dill
- 1/2 teaspoon freshly ground black pepper
Instructions
- Cut the cucumber in half lengthwise and remove the seeds, then slice it into thick half-moons and add to a large mixing bowl.
- Sprinkle the cucumber with 1/2 teaspoon kosher salt and let it stand for around 5 minutes to crisp and release moisture.
- After 5 minutes, discard any excess cucumber water from the bowl.
- Slice the tomatoes into thick wedges and add them to the bowl along with the thinly sliced red onion.
- Drizzle the mixture with champagne vinegar, olive oil, honey, remaining kosher salt, and freshly ground black pepper. Mix gently to combine.
- Add the chopped dill and toss the salad once more before serving.
- Chill or serve at room temperature.
Notes
For extra flavor, let the salad sit for 10-15 minutes before serving.
This salad pairs wonderfully with grilled meats or as a light lunch on its own.
Use any vinegar you prefer, such as white wine vinegar for a different taste.
