Description

Ingredients

  • Granulated Sugar (½ cup / 100g)
  • Brown Sugar (¼ cup / 50g)
  • Vegetable Oil (â…“ cup / 79ml)
  • Pumpkin Puree (1 cup / 244g)
  • Large Eggs (2)
  • Pumpkin Pie Spice (2 teaspoons)
  • Salt (½ teaspoon)
  • Baking Soda (1 teaspoon)
  • Buttermilk (â…“ cup / 79ml)
  • All-Purpose Flour (2 cups / 248g)
  • Granulated Sugar (2 tablespoons)
  • Ground Cinnamon (1 teaspoon)

Instructions

  • Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  • Whisk together flour, baking soda, salt, cinnamon, and pumpkin pie spice in a bowl.
  • In another bowl, mix granulated sugar, brown sugar, and oil until smooth; add pumpkin puree and eggs and whisk well.
  • Fold in buttermilk gently, then mix in dry ingredients until just combined.
  • Pour batter into prepared pan, topping with granulated sugar before baking.
  • Bake for 50-55 minutes, checking doneness with a toothpick.

For a gluten-free option, substitute with a 1:1 gluten-free flour blend.
