Description

  • Frank's Red Hot Sauce (or similar cayenne-based hot sauce)
  • Dark brown sugar (packed)
  • Garlic powder
  • Soy sauce (or tamari for gluten-free)
  • Rice wine vinegar (or apple cider vinegar)
  • Boneless skinless chicken thighs
  • Salt and pepper
  • Cornstarch
  • Olive oil (or neutral cooking oil for frying)
  • Water
  • Scallions (chopped, for serving)
  • White rice (cooked, for serving)

Instructions

  • Preheat your oven to 400°F and position the rack in the middle.
  • In a medium saucepan over medium heat, whisk together hot sauce, dark brown sugar, garlic powder, soy sauce, rice wine vinegar, and water until sugar dissolves.
  • Season chicken thighs with salt and pepper on all sides.
  • Dredge each seasoned chicken thigh in cornstarch, pressing to adhere.
  • In a skillet, heat enough oil over medium-high heat to cover the bottom.
  • Carefully place the coated chicken thighs in the oil and cook for 3 to 5 minutes on each side until golden brown.
  • Once crispy, pour the sauce over the chicken, ensuring each piece is coated.
  • Transfer the skillet to the oven and bake uncovered for 5 to 8 minutes.
