- 1 tablespoon olive oil
- 1 small onion (chopped)
- 1 clove garlic (minced)
- 1 1/2 cups basmati rice
- 1/2 teaspoon saffron threads
- 18 ounces chicken stock (or vegetable stock)
- 1 teaspoon salt
- Mint leaves (optional)
- Pomegranate seeds (or barberries) (optional)
Instructions
- Crush saffron threads and steep in water for 5 minutes.
- Sauté chopped onion in olive oil until soft, then add minced garlic.
- Add basmati rice, coating with oil and sauté briefly.
- Pour in saffron-infused stock, add salt, bring to a simmer, then cover and cook for 10 minutes.
- Let the rice rest with the lid on for 10 minutes before fluffing with a fork.
Notes
Store cooled rice in an airtight container for up to 3 days in the refrigerator.
For an extra touch, stir in a tablespoon of butter after fluffing the rice.
If reheating, add a splash of water to retain moisture.
