Description

Enjoy fluffy basmati rice infused with saffron and aromatic spices. This Fragrant Saffron Rice is a delightful side dish that’s easy to prepare and perfect for any meal.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 1 clove garlic (minced)
  • 1 1/2 cups basmati rice
  • 1/2 teaspoon saffron threads
  • 18 ounces chicken stock (or vegetable stock)
  • 1 teaspoon salt
  • Mint leaves (optional)
  • Pomegranate seeds (or barberries) (optional)

Instructions

  • Crush saffron threads and steep in water for 5 minutes.
  • Sauté chopped onion in olive oil until soft, then add minced garlic.
  • Add basmati rice, coating with oil and sauté briefly.
  • Pour in saffron-infused stock, add salt, bring to a simmer, then cover and cook for 10 minutes.
  • Let the rice rest with the lid on for 10 minutes before fluffing with a fork.

Notes

Store cooled rice in an airtight container for up to 3 days in the refrigerator.
For an extra touch, stir in a tablespoon of butter after fluffing the rice.
If reheating, add a splash of water to retain moisture.
