Description

This Fresh Carrot Ribbon Salad bursts with flavor and color, featuring crunchy carrots, nutty pistachios, and a tangy dressing. It’s an easy and healthy choice for any meal, making it ideal for gatherings or quick dinners.


Ingredients

  • 6 large carrots, (about 1 pound)
  • 1/2 cup finely chopped pistachios
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 1 green onion, (thinly sliced)
  • Extra herbs and chopped pistachios, (for garnish)
  • 1/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar, (or champagne vinegar)
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, (grated)
  • Kosher salt and black pepper, (to taste)

Instructions

  1. Wash and peel the carrots. Use a vegetable peeler to shave each carrot into long, thin ribbons and place them in a large bowl.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, vinegar, honey, Dijon mustard, and garlic. Season with salt and pepper, and whisk until smooth.
  3. Pour the dressing over the carrot ribbons and gently toss to coat.
  4. Add chopped pistachios, dill, parsley, and green onion to the bowl. Toss again until evenly mixed.
  5. Transfer to a serving platter and garnish with extra herbs and pistachios. Serve immediately or chill for 15–30 minutes for enhanced flavors.

Notes

Feel free to use different nuts or herbs based on your preference.
This salad can be made a few hours in advance; just add the herbs and nuts right before serving for freshness.
Adjust the acidity of the dressing by varying the amount of lemon juice and vinegar to taste.
